Froga tat-tarja is a Maltese pasta omelet, traditionally made with vermicelli. An ingenious way of bulking up freshly cooked pasta or turning leftovers into a second meal, this dish comes together without much effort and disappears just as easily.

Widow's soup (soppa tal-armla) (Maltese). We make it without the Kohlrabi. We add fresh spinach. We leave the Gbejniet(Maltese cheeselets) out because we don't have them in the US. Instead, when soup is almost done, we crack 1 egg per person, drop in soup, cover the pot, until the eggs are done.

A simple, delicious soup made from fresh vegetables including kohlrabi, peas and broad beans. It’s healthy and low fat. If you can find soft gbejniet cheese (available from selected delis and cheese makers), pop it into the hot soup for a few minutes before serving and you’ll enjoy the beautiful taste of molten cheese too.

This is a recipe to use up stale bread, originally devised when it was considered a sin to throw away breadbecause of teh association with Christ . The result is a luscious fudgy cake that can be cut up into squares and has nothing to do with thne usual bread and butter puddings . I love to eat this cake in summer , cold from the fridge. Please do try it, it wont cost you much to make. You might be pleasantly surprised. I use a maltese crusty loaf but any bread will do.
