Raw lemon & lime cheesecake. The perfect #paleo treat for those who have food intolerances (like me) or those who just want to #eatclean! Base: Blend - 1c almonds, 1c. medjool dates, 1/2c coconut. Press into coconut oiled tin. Freeze.  Lemon & lime cheese: Blend until smooth - 3 1/2c cashews (soaked for 4+ hr), 7 tbs stiffened coconut oil, 1/2c raw honey, 1/3c lemon juice, ¼c lime juice, zest of 2 lemons, 1tsp vanilla extract. Layer over top of base, freeze. Then devour! X
