Leftover Mashed Potato Pancakes 2 cup mashed potatoes 1 to 2 egg cup flour 1 salt 1 black pepper 1 onion Mix together and fry like pancakes. Just tried this with leftover garlic mashed potatoes, they were delicious.
Deep South Dish: Southern Fried Cabbage - I left out the Cajun seasoning & red pepper. I added a small chopped apple & cooked it with the cabbage. I fried my bacon in slices, crumbled it & added it in the last 10 minutes of cooking.

From Krista - parmesan spinach quinoa - LOVE! Very good but I would add a lot more spinach next time. I also tried this with kale, but I prefer spinach. You can also add veggies - I added grape tomatoes and zucchini!
