Lamington Tiramisu aka Lamingtonmisu For Australia Day!
Please know Dear Reader that I am not setting you up for a lot of work with this one. This can also be done with store bought lamingtons and is a fast and fabulous way to put together a dessert as it doesn't require the usual soaking time for tiramisu when you use sponge finger biscuits as the sponge is soft enough. I was actually surprised at how easy it was to put together and how shaping it into Australia or using caramel icing added only the most modest amount of effort to it. The cake is soft and vanillaey and the caramel and coconut seems like an almost natural fit for it. And Dear Reader, Happy Australia Day for tomorrow! Drive safely and have fun with whatever you do.
