Edible Artistry

An eighteenth century rococo dessert I created at the Bowes Museum in 1994 using a Chelsea botanical dessert service, Derby fruit baskets and figures. The sugar paste palace is surrounded by parterres filled with coloured sugar sands (sables d'office). All the confectionery items are made from eighteenth century recipes. Fire and Open Range

Much of the cooking is done over an open fire. The closed range has only just been invented. The meat was roasted on spits turned by gravity-driven spit mechanism.
