Zucchini Bites are a great meal to feed your tots who refuse to eat their veggies! So much flavor, the zucchini is shredded and they are shaped like a muffin! These also pass for crustless quiche! A toddler meal that can also be used during a brunch- SCORE!
Zucchini Fritters 2 cups shredded zucchini (about 2 medium zucchini) 3 eggs 1 Tbs coconut flour 1/2 tsp sea salt 1/4 tsp freshly ground pepper Coconut oil Shred zucchini (ring dry with paper towel). In lg bowl, beat eggs. Sift coconut flour into eggs & beat together. Mix shredded zucchini, sea salt & pepper & combine w/egg mixture. Set a skillet over medium heat. When hot, add coconut oil to coat bottom. Spoon the mixture into the pan in desired sized fritters.
