Zucchini, squash, courgette, marrow – zuchs come in a range of colours and can grow to up to a metre in length. When in season zucchini are bountiful. Eat them raw in a salad, stuff whole vegetables with mince or pilaf, or use your zucchini as inexpensive padding in stews and rich pasta sauces.
