Maggie Beer is an Australian culinary icon whose passion for food brings joy to many Australians. Maggie's focus is on using seasonal ingredients and educating people to make informed food choices. To this end she opened the famed Pheasant Farm Restaurant in 1979. Maggie and her husband ran it for just short of 15 years, winning a host of prestigious awards, before moving on to focus on producing gourmet foods.

I used the ricotta filling in this tart to create another tart that was inspired by Maggie Beers chocolate, quince and almond tart (http://www.masterchef.com.au/chocolate-quince-and-almond-tart.htm). For the pastry I used ready made Careme vanilla bean pastry. I poached a qiunce from the adelaide farmers market, sliced it and layered on top.

Jolly Pumpkin Brewery & Café—the Ann Arbor, Mich., eatery arm of the Dexter, Mich., brewery—serves up farm-fresh fare with the brewery’s innovative sour beers. Chef Maggie Long usually makes this vegetarian dish with splashes of wine, but for DRAFT she subs in Oro de Calabaza, the brewery’s tart, spicy Belgian strong ale.

tonight's indulgent little treat is maggie beer inspired caramelised figs in honey. four fresh figs, washed and cut in halves, caramelised in a hot pan with about a teaspoon of lurpak butter, and a few teaspoons of honey (i have some very special homegrown honey from a friend's father's private hives). served with a generous dollop of pure barambah organic cream. serves two (okay, or one...). happy days xo
