I give you my homemade pizza for two adults which cost only a couple of dollars to make. It’s certainly a cheap ‘make-do’ meal. It’s Cucina Povera. It’s Slow Food and it could be construed as fashionably gourmet.

Delicious vegetarian home cooking. A Stilton and baby leek croquette with smoked rocoto mayonnaise and green bean salad with camelina seeds.  The smoked rocoto sauce was the result of my fermenting the chillies for a year, then smoking them before blending and seasoning. It’s precious! So for this meal I added it to my homemade mayonnaise…and afterwards…I licked the bowl.

My simple Lao style pumpkin dish. I cooked butternut pumpkin in coconut milk.  It was seasoned with dry aromatics that I ground myself - a mixture of lime leaf, coriander leaves, lemon grass, pink peppercorns, ginger and garlicn.

The Slow Food Fillet-o-fish. Even the bread, the pickles  mayonnaise in the tartare sauce, as well as the breadcrumbs were made from scratch by me. Unprocessed, fresh locally sourced ingredients - about ten times more flavorful and filling than its chain store fast food equivalent.

Thai fish cakes - not the mashed potato European style ones. These contain fresh fish, Thai spice paste, lime leaf, onion, shrimp paste, coconut, chilli, garlic, with a little rice flour and egg to bind it.   Just mince it, shape into cakes and chill until ready to fry. Easy!

A salad of Northern beans onion and farro cooked in homemade chicken stock, mixed with vegetables from my garden: fragrant perilla, sharp sorrel, colourful beetroot leaves, San Marzano tomatoes and roasted red peppers.  The flavour packed @Warialda Belted Galloways beef tongue is dressed with greek yoghurt blended with roasted pepper, lemon juice, sumac, cumin and cardamon with a dash of orange blossom water.

I wasn’t sure it would work but it turned out posh - slippery, savoury, a hint of sweetness and a little anise. My homemade pumpkin ravioli with Buerre Noisette topped with sage, French tarragon, from my garden,  and truffle salt. The filling included @schulzorganicfarms Herbie quark and allspice, a free range egg. The butter was Naomi’s Myrtleford Butter, seasoned with Weyhill Farm garlic. Pure wholesome Australian luxury.

Passionfruit from Mr Sticki’s sister’s vine went into this slice. I based it on my lemon slice recipe, but added zest to the base.

A Lao and Thai inspired dish.   Aromatic meatballs made with Warialda Beef popes eye, sinews and tendons with Greenvale Farm pork fat. I fried them with eggplant and three kinds of basil from my garden, fresh coriander, then dressed it with prik nam pla.

My spin on Malaysian kaya toast, featuring Hainan honey kaya smeared duck egg and coconut pancakes, free range bacon, a little maple syrup and a coddled egg with soy sauce. Salty, sweet, smoky flavours oozing and melting into soft yolk and fluffy pancakes.

A happy accident. My fridge went a bit haywire and the homemade lemony mayonnaise froze. When it defrosted it split but despite whipping and adding more egg I couldn’t get it to thicken properly, so I added agar agar to stabilize it and dropped in some of Myrtleford Butter’s crême fraiche to make it into a salad cream. It’s velvety and delicious. Served with marjoram flowers on fresh leaves, it’s also a little bit special.
