Roasted Garlic Kale Hummus from Let Them Eat Kale! felt like the bitterness of the kale was a bit overwhelming. this would be good with more lemon to help with the bitterness or maybe a bit less kale than the full packed cup the recipe called for.
Delicious meal although I did make a few changes. Instead of the full water amount I used a tin of coconut milk & the rest water. For the sauce I used a TBSP each of honey, apple cider vinegar & soy sauce, and 1 tsp of veggie stock, and omitted the sherry
