Our other favourite cake is from Sweet Envy in Hobart. It is called Crouching Strawberry Hidden Pandan – almond sponge, pandan daquoise, strawberry and passionfruit mousse, coconut jelly and all layered with pistacio macaroons. This was an unusual cake but after all our travels in Asia it really hits that Pandan spot. I would go back to Hobart just for that cake alone!
Our favourite cake is our wedding cake:- a Mexican chocolate cake, made from an age old recipe using 70% cocoa solids Belgian couverture chocolate and has a Coffee Anglaise. You can order this cake from Josophan’s – Fine Chocolate, which is nestled in the heart of bustling Leura Mall in the beautiful Blue Mountains NSW Australia. This cake was very moist and rich. The quality of the chocolate was so good you could really appreciate that. Much better than Lindt chocolate cake any day.
