There's a reason everyone made Chicken Marbella when the recipe first came out in the Silver Palate cookbook. I've modified the recipe slightly to use bite-size pieces of chicken breast, which makes it fork-friendly for buffets.
Mediterranean chicken thighs with prunes, olives and capers. I added a few other ingredients - black olives, artichokes, lemon juice and red wine. I also used maple syrup instead of brown sugar and boneless, skinless thighs and reduced cooking time.
