I started making these little baked frittatas that Egg Muffins with Ham, Cheddar, and Green Bell Pepper is still one of my favorites. These are perfect for a quick low-carb breakfast or snack.

1 egg per cup, bake on 350 for about 30min. I used boarshead maple honey ham (2 small slices) and put a tbsp of mexican shredded cheese on top of the ham, poured in the egg, and put another tbsp of cheese on top. I did salt and paper a bit.
