my favourite thing to do is cook. i'm definitely an amateur, one of those annoying food pic people. some of my most treasured memories are friday nights in the kitchen with my family, crowded house playing in the background, red wine flowing, love and laughter, and a bloody good meal.
tonight's indulgent little treat is maggie beer inspired caramelised figs in honey. four fresh figs, washed and cut in halves, caramelised in a hot pan with about a teaspoon of lurpak butter, and a few teaspoons of honey (i have some very special homegrown honey from a friend's father's private hives). served with a generous dollop of pure barambah organic cream. serves two (okay, or one...). happy days xo
hello roasted butternut pumpkin soup! half a butternut pumpkin slow roasted for about 1.5hrs with a small onion, some aussie garlic and rosemary. blitzed up with 2 cups of chicken stock, seasoned with about 1/4tsp keen's curry powder (yes, you read that right) and a 1/2tsp nutmeg. keep on the heat to let the flavours infuse for a while. serve with a cheeky dollop of crème fraîche and cracked black pepper. a delicious spicy spoonful goes well with a fresh grain roll slathered in lurpak…
i've been hanging out for something a little naughty all week! friday night dinner for one is risotto with garlic, white wine (a 'small portion' as my uncle used to say), chicken stock, lots of rosemary, chicken breast, bacon, zucchini, green beans, asparagus, spinach and a delicious dollop of crème fraîche. such a happy tummy right now :)
today was a good food day. i promised that i would clean the cupboards out if i treated myself to a nice eye fillet for dinner. served it medium with a salad of green beans, kipfler potatoes, roasted cherry tomatoes and baby spinach tossed in salted butter with fresh cracked pepper (and shiraz, always shiraz). i have a very happy tummy, the sun has set and the cupboards are yet to be cleaned, oops
welcome to 2014. my new year's resolution is to cook more. okay, i do cook a fair bit already, but the whole idea is on day's like today, when i had enjoyed one too many glasses of bubbly the night before, i resist the urge to get some greasy (delicious) fried chicken take away for dinner, and just get off my ass and cook! this wholemeal pasta took 30 mins: chicken, garlic, oregano, lemon, olive oil, roasted heirloom tomatoes, spinach, shaved zucchini, cream and some pepper. and it feels…
close enough to clean. i love wednesdays because the jan powers farmers market comes to the city! fresh english spinach, heirloom green and butter beans, roasted heirloom tomatoes, roasted sweet potato, chicken breast, dodoni feta and a homemade dressing of dijon mustard, lemon juice and olive oil.
leftover homemade pumpkin soup became risotto with chicken, prosciutto and rosemary tonight. this is normally where i'd list ingredients, but all i did was precook some chicken breast and San Danielle prosciutto, remove it from the pan, then make your basic risotto (try the Marie Claire basic recipe), put the chicken and prosciutto back in with fresh chopped rosemary, then stirred in a cup of leftover homemade pumpkin soup. little bit of vintage cheddar, cracked pepper and a glass of wine xo

tonight is a super easy and quick to make post-workout meal. whole grain cous cous made on homemade chicken stock, pimentón, garlic, golden shallots, capsicum, yellow zucchini ribbons, baby spinach, grape tomatoes and lemon juice. accompanied by a seriously delicious piece of grilled atlantic salmon. oh yeah!
cheat's larb. there isn't anything traditional about this, just some typical asian ingredients thrown together in a rush to create a happy tummy, and a 'somewhat' healthy meal. i really have no idea what goes into real larb. sliced garlic, ginger, chilli, lemongrass, and kaffir lime leaf in peanut oil. lean chicken mince, bean sprouts and a mix of palm sugar, lime juice and fish sauce. toss in roughly chopped coriander and vietnamese mint before serving on iceberg lettuce.
After a big weekend, I desperately needed this chicken and BBQ corn chopped salad! our sunday lamb roast became a nice monday cous cous salad. wholemeal cous cous cooked in chicken stock, spiced with za'atar and tossed with warmed lamb, pickled garlic, truss tomatoes, lemon drop tomatoes, shallots, spinach, green beans and parsley. big squeeze of lemon over the top and some cracked pepper. i snuck some marinated feta on top to serve. a happy, healthy, no waste dinner.
my 'chicken sandwich'. i'm having a small, butterflied, pan cooked chicken breast filled with homemade guacamole, spinach and swiss cheese, for lunch. couldn't pick this bad boy up so went at it with a knife and fork. for the guac i used a whole avo, mashed up with fresh lime juice, cayenne pepper, garlic powder, salt and pepper, then stirred in some red onion and grape tomatoes for colour and a kick! xo
