Don’t cut all the way through, just down to the skin. Season with butter, parmesan cheese and Lowry’s seasoning salt, then pop them into the middle rack of your oven set to broil for 10-15 minutes.

These enchiladas are amazing. We will definitely make these again and again. I did change several things in order to use what I had on hand. Instead of sour cream, I used raib, which is like an Arab sour cream/yogurt. For the shredded cheese, I used edam and cut the amount in half. I used shredded turkey for the meat and also cut that amount in half, substituting diced tomato and corn for the rest. For the chilies, I diced half an anaheim pepper and 1 small green bell pepper.
