Creamy Fish Pie

This simple fish pie is perfect on a cool evening with a glass of white wine - something with enough acid to cut through the richness. I have cravings for this baby. Give it a whirl - you won't be disappointed. 60 g (21/4 oz) butter 2 leeks, white part only, sliced 1 large fennel bulb (about 500 g/1 lb 2 oz), finely sliced (reserve the fennel tips for the sauce) 1 celery stalk, finely diced 1 large garlic clove, crushed 1 kg (2 lb 4 oz) boneless, skinless white fish fillets, such as snapper…

Trend: Slowly turning Japanese

Cookbook author and all-round Japanophile Jane Lawson has patiently, and sometimes not-so-patiently, waited for the cuisine of the Rising Sun to capture Australia in its glow. Now, with inspiration coming through cult international chefs like René Redzepi and David Chang, plus some of our homegrown talents, it looks as though the dawn has broken and we’re finally set for an injection of izakayas and the ramen-ification of almost everything.

Ah Miso Hungry

Saikyo. Hatcho. Mugi. Aka. Shiro ?? Anyone?? If none of these ring a bell you might not know quite as much about miso as you thought you did. And no... it ain't just for soup. Homemade Crumpets

Australians have a fond attachment to this bubbly, yeast-leavened version of the pancake. Crumpets are (or were) commonly eaten toasted for breakfast - smothered with butter and honey or Vegemite! Thank you dear Simon Marnie (ABC Radio) for sharing your love of this recipe with your audience. It makes me smile to think of you whipping these up at home for the family! I agree - the store-bought version has NOTHING on homemade crumpets! makes about 12 (serves 4–6) 2 teaspoons dried yeast 1…

Book Review: Zenbu Zen

This fantastic book by Jane Lawson was recommended to me by my friend Marceline, and I'm so glad that I bought it. It's part cookbook, part travelogue, part memoir, and reading it is a zen experience in itself. I don't know whether I will be able to make many of the recipes from the book (although I am enjoying making the green tea latte pictured below), because many of the ingredients are difficult to find here, but reading the recipes is a pleasure even if I never make them, and the fact…
