I make this all year round and therefore the vegetables I use vary from season to season, the only ever present one being cabbage added at the end to retain a bit of texture. Tuesday, May 09, 2017 Any one who has followed my blog for even a short time will know that I love my food and cook the food that I love, including dishes which include butter and cream, dishes topped with cheese and rich desserts!  Because of this, I am fighting and losing the battle of the bulge!  Substituting spice for fat makes cooking lower fat dishes more flavourful. It can be made in advance and kept, covered in cling film, in the fridge until needed but no more than a couple of hours. This is my Mum's recipe and was a childhood favourite for my siblings and I.  This tart has a tangy, citrus centre, which is complimented by the fluffy meringue topping, it is not a particularly spectacular looking pie, I have tried other recipes with mile high mounds of meringue and sweeter custard fillings but I have always come back to this recipe, I make Key Lime Pie and love it but it is not what I am looking for here, I love the contrast of the tart filling and sweet meringue.
