1 broccoli 3 garlic cloves, finely chopped 4 eggs 1 bunch of parsley 150 g flour/buckwheat flour 80 g feta cheese 1/2 cup pine nuts 1 lemon Salt pepper 1. Chop broccoli finely, steam for 5 min. 2. Beat eggs add the flour, garlic, salt pepper parsley. 3. Chop feta place into the mixture. 4. Place nuts in a fry pan and gently roast until golden. Add to the mixture. 5. Add broccoli 7. Cook the fritters for 2-3 minutes on each side, or until golden.

This is my favourite salad at the moment, I just tweeked a typical pumpkin salad and added my own bits to it. I love the combo of these flavours. The sweetness of the roasted pumpkin and the caramelised onions go really well with the salty fetta, the creamy nuttiness of the pinenuts, the sharpness of the Balsamic and the peppery taste of the rocket. Substantial in itself, it's a great BBQ salad, or accompanying spiced lamb cutlets. Yum!
