We love this pasta-less 'pasta', and it's a great way to get picky eaters to eat more vegetables. Try it with a few toasted pine nuts and some shaved parmesan.

If traditional risotto makes you feel a bit stodgy and heavy, try substituting barley for the arborio rice. It has a lower GI and is a more nutritious alternative (AND it's delicious).
