Hot Cross Buns | Paleo | The JOYful Table
Hot Cross Buns have always been a tradition at Easter time in our home but the muffin style I usually made wasn't popular with my hubby. He wanted them to look like real buns but still be healthy and flavoursome. The addition of psyllium husk powder to the recipe has helped make the mixture hold together well to shape into buns, plus a couple of other tweaks. Sometimes it's not always good that he likes a recipe this much, they just don't last but I'm glad they freeze well to hide.
Christmas Balls | Paleo | The JOYful Table
These yummy Christmas Balls are flavoured with tangy, sweet dried cranberries and a hint of festive spices. They deliver a big healthy dose of antioxidants. Dried organic cranberries contain the same nutrients as fresh, however commercially dried cranberries with sugar added reduces the vitamins.
Paleo Porridge | Paleo | The JOYful Table
A warm comforting porridge that is oat and grain free, perfect for those cold winter mornings. This no fuss porridge is packed with Omega 3, protein, fibre and lots of antioxidants. A very filling breakfast that's even more delicious topped with a dollop of coconut yoghurt.
Chocolate Chip & Pecan Cookies | Paleo | The JOYful Table
Chocolate chip cookies are everyone's favourite treat. Your average chocolate chip cookie is loaded with refined sugar and wheat flour. This yummy version with it's crunchy outside is not only packed with healthy dark chocolate but you get a nutty crunch from pecans too.
Chocolate Coconut Banana Bread | Paleo | The JOYful Table
This banana bread is the perfect kids' lunch box treat. It's full of flavour and packed with protein. As well as being moist and chocolatey the coconut and quinoa flakes give it a lovely texture. Being nut-free it's suitable for children to take to school or to serve at kids birthday parties and the big kids will also enjoy it with their cuppa.
Paleo Anzac Biscuits | Paleo | The JOYful Table
A crunchy gluten and oat free version of Anzac Biscuits. Anzac biscuits have long been associated with the "Australian and New Zealand Army Corps", they go back to World War 1. The families of our troops back home sent the oat biscuits to their men fighting, they contained more nutrients at the time than their army rations.
Caramel Sauce | Paleo | The JOYful Table
A delicious no-fuss, dairy-free Caramel Sauce to pour over puddings and desserts. It's an excellent alternative to custard if you need to avoid eggs. The sauce thickens once chilled and is really yummy poured over dairy-free ice cream or warm with my Paleo Plum Pudding (I use my Christmas Cake recipe to make individual Plum Puddings).
Tropical Smoothie | Paleo | The JOYful Table
This creamy, refreshing tropical smoothie not only tastes amazing but it contains ingredients to help with gut health and digestion. Pineapple contains the digestive enzyme bromelain and can also help reduce inflammation. Pineapple is an excellent source of manganese and vitamin C. I've also added gelatin which helps heal and seal the gut lining, so drink up and know you are aiding your health.
