Pills and Thrills: Mediterranean Vegetable Landslide

Mediterranean Vegetable Landslide

Here we have another recipe that isn't really a recipe. I don't like telling people how to cook, I just like to offer suggestions. I call this one Mediterranean Vegetable Landslide because I'm far too lazy to get a neat "Stack" and I want to make sure I'm full up when I'm finished eating. I started off by toasting some pinenuts in a non stick pan - watch them and shake them as you do this because I can guarantee, if you turn your back, you'll get distracted and they'll burn. Prepare your…

Pills and Thrills: You Can Make Friends With Salad

You Can Make Friends With Salad

Trawling through all my old blog posts and I almost can't believe I haven't shared my Mexican Salad recipe with you. I've been making this for nearly twenty years and it's a major crowd pleaser. My boys wolf it down and Chip has said he could eat it every single day. That's something from anyone but from a seventeen year old carnivorous beast, it's something I'm never likely to forget. I first tasted it when I was living in Kambalda during my first year teaching. At university a particular…

Pills and Thrills: Vietnamese Spring Rolls

Vietnamese Spring Rolls

These are one of my all time favourite foods to make. Sometimes known as rice paper rolls, vege rolls and a handful of other names, they're fresh and delicious and they always make people go wow! They are easy to vary according to what ingredients you have on hand, or who youre feeding, and you can make big ones and little ones. For me, the hardest part is keeping my Vietnamese mint plant alive but don't worry, coriander and common mint work just fine if you can't get hold of Vietnamese…

Pills and Thrills: Quinoa Nori Rolls

Quinoa Nori Rolls

I'm rubbish at plating dishes but it tastes good! I so want to like sushi. It hints at being fresh and healthy but, for me, it never quite makes the grade. I like all of the components separately, especially fish, avocado and cucumber, but together it's ho hum. And I know refined white rice isn't good for me. Yet the thought of it sneaks into my mind now and then and whispers, eat me, make me, want me. And, because I so enjoy making it, I inevitably do. But I've had to make a few minor…

Pills and Thrills: Miso Soup

Miso Soup

Miso Soup is a special dish for me. I love its simplicity. It's ridiculously easy to make, tasty and good for you. But like all good food, it's how it was introduced to me that makes it so special. I don't even remember how it came about, but in my first year of teaching (in case I didn't tell you before, I used to be a teacher), the school I was working at hosted a man from Japan who was on cultural exchange. While I was training to be a teacher I had worked with class whose teacher had…

Pills and Thrills: Thai Fish Cakes with Cucumber Relish

Thai Fish Cakes with Cucumber Relish

Most of you know I love to cook and I especially love to eat. The big thing is that I still like to eat, even when I don't really want to spend hours in the kitchen. This recipe is taken from the "Consuming Passions" cook book. It was a five minute cooking show on the ABC. I borrowed the book from the library thinking anything made in a five minute TV show would have to be easy enough. This is one of the recipes I copied down. I've never seen the need to change anything. Fishcakes 1 chilli…
