An updated potato salad, minus the mayo, is made with roasted red, white and blue mini potatoes, fresh herbs and a mustardy olive oil dressing.

"GREEN PASTA" . . . Using a mandoline, slice about half a bunch of asparagus lengthwise into thin ribbons. Attach the julienne plate to your slicer and shred 1 zucchini, slicing on each side only until you reach the seed “core”–don’t add the seeds. Cook 10-12 ounces linguine; when 3 min cooking time remains, add asparagus. When 2 min remain, add the zucchini. Drain pasta and veggies and return to pot; stir in sauce. Serve with grated cheese and some basil or chives.
