I omitted the cocoa, swapped oat fiber for the almond flour, added 1 1/2 T Jay Robb Vanilla Whey protein powder, (this is an extra ingredient, & probably made the difference in bulk & crispness) & I used 3/4 T xylitol. I thinned the batter w/ maybe 2T almond milk. The waffle iron was set to 5.5 and I let it cook longer than the beep.
