Lemon snow parfaits, with fresh blueberries, raspberries and whipped cream. My guests loved these! Such a light, refreshing dessert. Gluten free too! So easy to make. Follow the directions for lemon pie filling and for meringue on the Sherriffs' lemon pie filling box. Don't bake the meringue. Gently fold the cooked lemon filling into the whipped meringue mixture. Layer with fruit and cool whip. I served it in "redneck wine glasses".
