Lighter Than Air Low Carb Pancakes 3 eggs 1/2 cup ricotta cheese 2 tbsp. cream cheese, softened 3 tbsp. coconut flour 1 tbsp. protein powder 1 tsp baking powder pinch baking soda cream Whisk eggs until frothy. Mix in remaining ingredients until smooth. Melt butter on hot griddle. Pour 1/4 of batter on griddle for pancakes. Cook until brown and firm enough to turn. Turn and cook other side. Serve with butter and your favorite low carb topping. Makes about 8 four inch pancakes.
