Akiva ben Joseph - Rabbi Akiva was known as the Head of the All the Sages, who established the guiding school of thought of law of Jewish practice incorporated into the Talmud.  He was true to his faith and died saying the Shema as Roman's flayed his skin for continuing to teach Jewish law contrary to Roman edicts banning Judaism.
