I am not a vegetable lover. That said, I do like to eat healthy and I know eating lots of veggies is a part of that. When I discovered roasting them I was amazed at how it changed the taste from simply being steamed or sauteed.

Oven Roasted Garlic Green Beans 1 lb of fresh green beans, trimmed 4 t. of extra virgin olive oil (EVOO) 1 t. sea salt 1 t. freshly ground black pepper 1 t., or so, of lemon juice 1 Tb of minced garlic marinate 20 mins. Bake in oven for mins.
