  • 3 slices Of applewood smoked bacon, thick-cut

  • 1 1/4 lbs Eggplant
  • 3 cloves Garlic
  • 4 tbsp Scallions
  • 1 1/2 tbsp Sichuanese chili bean paste
Canned Goods
  • 2/3 cup Chicken stock
Baking & Spices
  • 3 tsp Cornstarch
  • 2 tsp Sugar
Oils & Vinegars
  • 2 tsp Chinkiang vinegar
  • 1 Neutral oil
Other
  • 2- inch piece of ginger (peeled and grated on a microplane)
