This was the first batch of muffins that my kids said it's like biting into heaven. Light and fluffy, Fresh Blueberry Rhubarb Muffins have amazing flavor.

Rhubarb Upside-Down Cake: 4 cups rhubarb, chopped (in this case I used 3 cups rhubarb, about 1/3 cup strawberries, and 2/3 cup elderberries), 1 cup sugar, a 3 oz package of strawberry gelatin (also try cherry, raspberry, and orange), cake batter (vanilla, butter, or white cake -- I used Betty Crocker's Silver White cake [substituting 2 eggs for the 4 egg whites]).
