DJ Dave Diner 6/18 Sage & Nutmeg Shrimp w/Bleu Cheese Risotto - Lots of flavors (and patience), as I married sage, butter, a touch of half & half, wine, nutmeg & bay leaf to sauté shrimp, then took the excess liquid and cooked the risotto with it plus cream and a little bleu cheese. My love affair with buttered, pan-fried sage continues
DJ Dave Diner 8/18 Chicken Kiev w/Sage & Truffle Oil - When something oozes butter, it can never be a bad thing, right? That's what I've always loved about this dish. Problem is, it usually oozes too much, before I cut it open. Problem solved by butterflying and partially cooking, and stuffing prior to pan frying. A little tarragon, sage, truffle oil, and butter, topped with a little extra sage at the end, and you're good to go!
DJ Dave Diner 12/9 Cornmeal Crab Cakes - After that amazing meal at Sanctuary last night, I needed comfort food tonight. Easy peasy 15 minute crab cakes tonight, as I simply add cornmeal, bread crumbs, scallions, Worcestershire, butter, Old Bay, eggs, fresh herbs and, of course, crab. Pan-fried in truffle butter. A little drizzle of lemon and warm butter, and you're good to go!
DJ Dave Diner 7/24 Smoked Scallops w/Truffled Risotto - Hadn't made lunch for Mom in awhile, and when she said she bought scallops, my antennas went up. Since I still had tarragon, I decided to quickly smoke the scallops with it, then sear them in brown butter, then let them recline on top of a white truffled risotto which I forced her to try, LOL (she didn't like truffle smell, but loved the taste!). Love making her try new things!
DJ Dave Diner 3/12 Grilled Stuffed Avocado, w/Spinach Salad - Popeye would be proud. Did a spinach salad with, cherries, cranberries, mandarin oranges, walnuts, bleu cheese, and a balsamic honey Dijon dressing. And the avocado? I had never grilled one before, and when others questioned why I would, that's when I knew I should. :-) Grilling brought out the buttery taste, and accented it by stuffing it with a crab mix. Addictive. And healthy to boot!
DJ Dave Diner 10/29 - Jerk Marinaded Shrimp - Who likes it REALLY spicy? So many people have been feeling under the weather lately, and the best thing about my wet jerk marinade is that it actually can help the effects of a cold or flu. Combine scallions, shallots, garlic, ginger, scotch bonnet pepper, allspice, cayenne pepper, cinnamon, brown sugar and nutmeg, blend together, and instant sinus happiness. I like to marinade shrimp with it! (chicken, too!)
DJ Dave Diner 3/8 Asian Sake Shrlmp Scampi - Because of the unexpected hail today, I kept it indoors, with a little Asian/Italian fusion. Fresh udon noodles vault shrimp I steamed in butter, garlic, sake, and Chardonnay infused sea salt. A little sprinkled Parmesan and..... Oishii!
DJ Dave Diner 11/12 Chicken Mole - Savory Tex-Mex flavors going on here, as I combined chicken, onion, cumin, coriander, cinnamon, ancho chiles, tomato, garlic, chocolate, and raisins. Put the whole thing over saffron risotto, and the only thing better than having it hot, is eating the leftovers for breakfast. ¡Que sabor!
DJ Dave Diner 11/2 Shrimp on Forbidden Rice w/ Béarnaise - Shrimp has to take 3rd billing tonight next to its co-stars, as I've meaning to cook this for a long time. I did a tangy Béarnaise with lemon, wine, vinegar, shallots, egg, and tarragon, topping a flavorful organic "forbidden rice"; a deep blue rice infused with blueberry juice. Major tannins, major flavor.

DJ Dave Diner 6/4 Sesame Saffron Risotto, w/Sun-Dried Tomatoes - Eating gluten-free and vegan tonight, mixing up a healthy dose of arborio, saffron, baby basil, sun-dried tomatoes, sesame seeds, cardamom, red Hawaiian salt, and a touch of habanero sugar. Bright colors and bright flavors!
DJ Dave Diner 4/10 Kalamata Pesto Chicken - I've never made "not enough" pesto; it's always too damn much. So I marinaded some cage-free chicken overnight, and added some sweetness with a homemade Kalamata olive, sugar, red wine vinegar, and pearl onion tapenade, served over gluten-free corn/rice DeLallo penne. RIP pesto!
DJ Dave Diner 3/22 Five Spice Scallops - While the spinach is steaming off to the side in browned butter and nutmeg, the scallops wait patiently. Tonight I did the scallops with a fresh scratch five spice of cinnamon, cloves, fennel seed, asian pepper, with a little extra star anise. Awesome kitchen aromas abound!
DJ Dave Diner 5/31 Jerk Seasoned Halibut Steaks - Did a wet seasoning of cinnamon, allspice, cloves, scotch bonnet peppers, nutmeg, reduced balsamic, and a few special spices, on top of coconut milk jasmine rice. If I can't be on vacation, at least it FEELS like the Caribbean!
DJ Dave Diner 3/25 Dill Spaetzle - Meatless Monday goes Guten Tag today. Love making spaetzle, because you can't really screw it up :-) - I combined dill, leeks, nutmeg, parmesan, and mustard with a half regular and half gluten free rice flour, to make it a little healthier and less filling.
Dinner becomes brunch today, as I've been craving to make this all week! Chicken Piccata - One of my favorite Italian dishes, fresh from the stovetop. Panned--fried scaloppini chicken, roma tomatoes, lemon-infused EVOO, garlic, white wine, artichokes, capers, lemon juice, sweet cream butter.
