Ever wondered why German yeast cubes weight in at 42 grams (1.48 oz.)? While easy to find in today's grocery stores, bakeries used to be the exclusive sellers of yeast in Germany. Their large blocks weighted in at 500 grams (17.64 oz) and were then divided into 12 smaller cubes for resale. Often difficult to find outside of Germany, you can sub 1 cube of fresh yeast with ¾ oz or 1 ½ table spoons of active dry yeast.
