vegan banana almond french toast - I would use plain Greek yogurt instead cuz I'm not vegan.

Coconut-banana French toast 1 banana 1/2 c of light coconut milk from can 1 c of almond milk (I used unsweetened) 2 TBS evaporated cane sugar 1/4 tsp ground cinnamon 1/4 tsp ground nutmeg 1/4 tsp pure vanilla extract (I used 1/2 tsp) 6 slices of whole grain bread (I used 6 slices of Ezekiel bread and had to use 4 slices of soft whole grain) Earth Balance vegan margarine (for the pan)

Coconut milk & banana makes a yummy French toast batter. I condensed the recipe a bit and instead of coconut milk, unsweetened almond milk, vanilla and sweetener.I just used Vanilla coconut almond milk.
