quinoa is a great building block for healthy dishes. IE: simply add the zest from one lemon to the cooking liquid. Chop a few handfuls of baby spinach & a pint of cherry tomatoes & place them in a large serving bowl. Cook the quinoa as directed & put on top of the spinach & tomatoes & allow it to wilt the spinach & cook the tomatoes with its heat for about 5min. Toss all w/juice from 1 lemon & a little drizzle of EVOO. serve the salad warm or cold.
