Roasted Potatoe--Cook a pierced potato in the microwave for minutes until soft throughout. Cut in half, then into squares (just down to skin). Season with butter, parmesan. Place in oven on aluminum foil-lined pan and broil for 10 - 15 minutes.
I know i don't eat potatoes.but I could think of that as potato chips and prob be okay :). Better than fries! Cut potatoes almost all the way through, drizzle olive oil, butter, some sea salt, and pepper over top and bake @ 425 for 40 minutes
Eggplant Parm--healthier than medium eggplant (about 7 inches long) cup milk 1 cup Italian bread crumbs 2 cups chunky marinara sauce 2 cups grated mozzarella cheese cup grated parmesan cheese. I love Eggplant Parmesan I want to try this!
