Healthy Dairy-Free Chocolate Truffles 4 lrge, Medjool dates 2 TB 85% cacao chips, melted 1 TB almond butter Natural sweetener, optional 2 TB almond meal, plus additional as needed Soak dates in hot water for 10 mins. Drain. In bowl, mash dates with chips & almond butter, till smooth. Add sweetener. Roll generous ½ TB into balls & roll in almond flour. Refrigerate truffles 30 mins to set-up. Store balls in refrigerator for up to 1 week or freezer for up to 3 months.
