This moist chocolate coconut slice is quick and easy to make. Preparation time: about 20 minutes (excludes baking time). Makes 16 pieces ...

Ingredients 3 cups cooked rice (I used brown) 1 cooked chicken breast (shredded) 1 carrot (grated) 3 spring onions sliced 1 1/3 cup grated cheese 3 eggs  Mix all ingredients together, leaving some cheese to sprinkle on top.  Spoon into greased muffin tray and bake at 200 degrees for about 15mins.

Lemon Coconut Slice: if you love lemons.... this slice is my all-time favourite & disappears at work morning teas! And there's no baking so good for hot summers! (Aust measurements - but is forgiving enough could be just done as equal US) Arrowroot biscuits are plain biscuits - perhaps substitute Graham crackers?)
