35min · 4 servings Recipe: • -2 eggplants • Cut in chunks and heavily salt it. • Wait 10mins and pat dry them. • Fry in some oil until charred. • -a thumbsize piece of ginger • -3 cloves garlic • -1 Tbsp curry powder • -1 Tsp chili powder • -2 Tbsp tomato paste • Roast 4min. • -1 Cup (250ml) each water and coconut milk • -1 heaped Tbsp peanut butter • Let it simmer 10mins. • Finish with salt, lemon juice and a touch of agave. • Serve with rice.

Doenjang Jjigae is one of the most classic comfort foods in Korean cuisine that is quick and easy to make, yet packed with bold flavors. This hearty and delicious soybean paste soup will instantly warm you up on a cold day, and tastes just like the ones served in K-BBQ restaurants!

Wet: -1 cup (190g) cooked chickpeas -1/2 cup (125ml) water -2 Tbsp soy sauce -1 Tsp mustard -1 Tsp salt -optionally: some garlic powder Dry: -2/3 cup (75g) chickpea flour (or all purpose flour) -1 cup (130g) vital wheat gluten (can’t be replaced) Blend in a food processor 4-5mins until it’s a dough OR blend the wet ingredients and then knead with the dry ingredients for 10mins. Roll in a long sausage, twist and make a knot. Broth: -8 cups (2L) water -1 onion, halved -2 cloves smashed garlic -3 Tbsp soy sauce Bring to a simmer. Cook the Seitan 45-50min. Let it cool down (I like to place it in the fridge for that). Then tear into chunks, now you can: -marinate it -fry it -refrigerate it (1 week) -freeze it (3 months) • Recipe by @fitgreenmind on Instagram
- 400 g tofu - 2 cups cornflakes (I used gf) - 1 tsp salt - 1/4 cup flour (I used gf) - 1 tsp ground flaxseeds - 1/2 tsp garlic powder - 1/2 tsp paprika - 1/2 tsp salt - 1/2 cup plant based milk (or water) INSTRUCTIONS: Freeze the tofu at least an hour ahead of time for a better texture (optional). Cut it into 1/2 inch pieces, top with a towel / paper towel, a baking sheet and a few books for 10 minutes to remove any excess moisture. Meanwhile, blend the cornflakes and salt until reach Panko breadcrumbs texture. Transfer into a bowl. In a separate bowl stir flour, spices and milk to create the wet batter. Heat vegetable oil in a large pan. Dip each tofu piece in the wet batter, then into the breadcrumbs and fry on both sides until golden and crispy. I served it with sush
