Greek chicken and rice pie
This pie is one of my all-time favourites and brings together some of Greece’s most popular ingredients – silverbeet, haloumi, Kalamata olives, rice and filo pastry. It takes a little while to prepare but don’t be put off, I promise it will be well worth the effort.
Pomegranate and sumac chicken recipe
Pomegranate and sumac chicken is an ideal dish for an outdoor summer party. I favour cooking it in the oven because the marinade is apt to burn on a barbecue. Sumac is Turkey’s favourite spice. It’s a red berry with an astringent, lemony flavour, the fruit of a small bush. This dish is ideal as part of a warm and cold buffet where people have a bit of everything including a rice pilaf.
Riz al djaj (poached chicken with smoked rice and tahini yoghurt)
This is a wonderful traditional Lebanese chicken and rice dish with crisp onion, fried nuts, vermicelli noodles and a tahini dressing.
Chicken baked in yoghurt, kefalotiri and dill
There are many versions of this easy, home-style Greek dish. Some cooks use sheep’s milk yoghurt so substitute that if you like. If you can’t get kefalotiri (a hard, pungent Greek cheese), pecorino or parmesan make a wholly acceptable alternative.
Wonderful, simple and satisfying, chicken pulao never fails to impress at a casual lunch with friends or a family dinner. Unlike a biryani where the meat and rice are cooked separately, in a pulao dish the rice and meat or vegetables are cooked together in one pot.
Indian-style Hyderabadi chicken
Ajoy Joshi has an unusual technique for cooking this Indian dish, which involves covering the saucepan with a bowl with a little water inside it instead of a lid. As the chicken cooks in its own juices, it creates steam that holds the bowl in place, sealing in all the delicious flavours. The result is amazingly tender – as if the chicken has been steamed. Ajoy is also a master at blending spices.
